Marzipan
I’ve just realised that I wrote all about my childhood memories of home made marzipan for the December Newsletter but completely forgot to include the recipe!!!
So, for anyone who has never tasted the ‘real thing’, here is my favourite recipe…
1lb ground almonds
1/2 lb icing sugar (finely sieved)
1/2 lb castor sugar
2 small eggs
juice of half a lemon
1 tablespoon sherry or rum
1 teaspoon orange flower water
few drops of almond essence
Mix the castor sugar, icing sugar and ground almond thoroughly together in a bowl. Pour in the lightly beaten eggs, add the other liquids and work to a smooth paste.
If you have made more than you need for your cake, you can shape what’s left into log shapes, leave to dry out a bit and then dip in chocolate. Makes a great gift for marzipan lovers.
